SOURDOUGH PIZZA DOUGH
FIRSTKeep the sourdough pizza dough frozen until you plan on using it. Frozen, the dough is good for 30 days.
SECONDPull the pizza dough from the freezer and leave it outside until it doubles in size. This may take 8 to 10 hours under normal conditions (70 F).
If it is hot (80 F +) then the dough will proof faster.
THIRDOnce the dough has doubled stretch it to the size that you would like, add toppings, and bake in your home oven of a pizza oven at 500F until the crust is brown.
LEAVING DOUGH IN REFRIGERATORPizza dough can be left in the refrigerator to proof. It will take about 24 hours to fully defrost and then the dough can be pulled and left to proof at room temperature until double in size.
